Breakfast Ice Cream

Cereal, smereal!  Who needs it when you can have ice cream for breakfast!  Your kids are going to love you!  YOU are going to love you!  Seriously, since tasting this creamy, tropical bowl of refreshing goodness we can't think of ever having anything else!  


Actually, it isn't ice cream at all, but a delicious pineapple banana "smoothie" you eat from a bowl.   It is very reminiscent of Disney's Dole Whip.  If you've ever been to Disney then you know exactly what I am talking about, drooling about, dreaming about.  And you also know, that once you try one you have to get one (or five) every time you go back.  Since we won't be heading to Disney any time soon, we decided to try and make our own version right here at home.  The results were so yummy and healthy that we decided we would eat it for breakfast (and lunch and dinner) and call it breakfast ice cream. You seriously have to whip up a batch!


Here is our basic recipe that can be altered to suit your personal taste.  If you like it more banana-y then add more bananas.  If you like it more pineapple-y, like the Dole Whip, then add more pineapple.   

For "Ice Cream":
2 frozen bananas (must be frozen), broken in pieces *
1 can pineapple rings or tidbits, frozen (must be frozen) 
1/4 to 1/2 cup canned coconut milk (NOT the refrigerated kind) 

Our Favorite Toppings:
blueberries
strawberries
unsweetened coconut flakes
sliced almonds

Place bananas and as much or as little pineapple as you like into a blender or a food processor along with the coconut milk.  Blend until smooth and creamy.  You will want it to have a soft-serve ice cream consistency.  If it is too thick you can add more coconut milk or add some milk, heavy cream, half and half, etc.  Scoop into serving bowls and top with desired toppings.  Enjoy!


Get creative!  Use granola, other fruits, nuts, berries, sprinkles, etc.  Experiment!  Have fun!  Have a toppings bar and let your kids create their own breakfast ice cream.  


* Freezing bananas- peel your banana and break it into smaller pieces.  Put pieces on a baking sheet or freezer safe plate and put in freezer.  When pieces are frozen they can then be put in a freezer bag for storage.
