Easy Avocado Crispbread
I don't know why we are so obsessed with avocado "toast" right now??? Maybe it's that avocados have been so cheap lately or we are craving something green and fresh after the holidays or we are trying to find new ways to introduce fruits and veggies to our littles. Regardless of the reason, we are OBSESSED! Like head-over-heels, OBSESSED! We have made this yummy avocado toast every day this week and we aren't ashamed to say that we will probably do the same thing next week. Our 4 year old and 16 month old both scarf it down like it is candy. I'd say that's a win!
Eventually, we will branch out and try our hand at creating new "toasts". But for now, we are happy with our creamy, smushy, heavenly, green avocado toast. You know, toasts are all the rage right now (or are we already behind?) at those hipster coffee shops. Don't get me wrong, I would LOVE to be young enough or cool enough to be considered a hipster. But this mama still knows a good thing when she tastes it, hipster or not😜
Miss 4 has seen me make her avocado toast so many times that she can now make it all by herself, aside from the cutting and pouring of course. There are so many valuable lessons to be learned while cooking- life skills, fine motor skills, reading and following instructions, hand-eye coordination, nutrition, food groups, numbers, math, quantities.......
Thought we would share a photo how-to with you in honor of our little chef being able to make her own lunch. She said, "Mommy, if you aren't home (don't know when I'm ever not) , I can make lunch for little sister and daddy." That's my girl!
The Main Characters:
-100% whole wheat bread, toasted or Trader Joe's Whole Grain Crispbread ****See update below***
-1 ripe avocado, cut in half, pit removed
-handful of cherry tomatoes, quartered
-small wedge of queso fresco or feta cheese
- small lemon or lime wedge
-sea salt
-extra virgin olive oil (we used Trader Joe's Premium Extra Virgin Olive Oil)
-Trader Joe's Balsamic Glaze
Step 1: Scrape avocado into a bowl.
Step 2: Smash, smash, smash! This step is really fun for a little chef.
Step 4: Squeeze fresh lemon or lime juice into mixture. (Then suck on the remaining wedge if you are 4 years old😀)
Step 5: Have your grown up drizzle a little olive oil into the avocado mixture. We used Trader Joe's Premium Extra Virgin Olive Oil. What a bargain at only $7.99 for a huge 32 oz. bottle! And it comes with this super cute pour spout.
Step 6: Gently mix all ingredients to combine. Place on your toast. *** See update below**** We used heart shaped cookie cutters to make some of our toast extra fancy since we are so close to Valentine's day. Miss 4 and I like to eat ours open faced but we close Miss 16 month's or avocado mash would be everywhere!
Step 7: This is a fun step for little chefs. Garnish! Artistically place your cherry tomatoes on your toast. Sprinkle with additional sea salt if desired (yes, we desire!)

Since first posting this recipe on January 23rd, we have made a few extra yummy discoveries! We found this amazing whole grain crispbread at Trader Joe's and have been making our avocado "toast" on it ever since. It's so healthy and yummy!
We love the crunch and all the seeds. Not to mention, there are only 4 net carbs in each cracker.
I kicked mine up a notch with a a fried egg on top! Wouldn't this be a nice dinner with a side salad?
