Watermelon Popsicles and Aquas Frescas
If you love watermelon as much as us, then you need to try these two recipes immediately! They are so refreshing on a hot summer day and would be PERFECT for the 4th of July! They are great for picnics, pools, BBQs, and good old fashioned summer fun! We are packing both up in our picnic basket to take to fireworks on the 4th.
Watermelon Popsicles
Here is our basic watermelon popsicle recipe, but if you like your popsicles sweeter, add more sugar, if you like them more tart, add more lime. Enjoy!
Watermelon Popsicles
6-8 cups of watermelon, cubed (about 1/2 of a small watermelon)
1 1/2 limes, juiced
2 tablespoons sugar
12 paper cups
12 popsicle sticks
plastic wrap
Place all ingredients in a blender and blend. Poor into paper cups to desired level. Cover with plastic wrap then poke a hole in the middle with a popsicle stick. Straighten sticks and freeze. Enjoy!!!
Aguas Frescas or "Cool Waters" are very popular in Mexico during the spring and summer months.
They are typically made of some fruit, grains, seeds, water and sugar. There are so many variations. They are often sold out of large glass jars by street vendors or small taquerias. Our favorite recipe is very simple. We like it on the tart side so we don't add all of the sugar called for in the recipe. Give this recipe a try. Use your favorite fruit, make fun combinations, add more sugar or less sugar. The sky's the limit!

Watermelon Aguas Frescas
2 cups watermelon, cubed (or any other fruit)
2 cups cold water
l lime, juiced
1/4 cup sugar (we don't like our as sweet so we start with 2 tablespoons)
Place all ingredients in a blender and blend. Strain and serve over ice. Store leftovers in the refrigerator. Contents will separate, so stir or shake before serving.
