Chocolate Covered Strawberry Bar

You heard right!  We have created the ultimate chocolate covered strawberry bar!  Well, maybe it's not the ULTIMATE, but my 4 year old sure thinks it is.  And in my book, that's all that really matters!  Your little valentines (and big ones too) can dip to their heart's content and create their very own yummy Valentine's Day desert.  These chocolate covered strawberries are so delicious and super easy to make.  All you need is a package of strawberries, some chocolate and a good old fashion pantry raid.  You will be amazed with the crazy cool things you already have on hand.  Your kids are going to love you for this one!! Trust me.  Check out what we found in our pantry raid.  Next year, the raid will yield totally different results, and that's part of the fun!

*Pepperidge Farm pretzel goldfish, broken into small bits
*Kellogg's Rice Krispies
*Mini chocolate chips
*Trader Joe's Roasted Coconut Chips
*Kraft jet-puffed mallow bits
*Sprinkles
*Sanding Sugar
*Lay's potato chips
*Sliced almonds
*Chopped pistachios

We used this simple recipe by Betty Crocker for our dipping chocolate.  Here are the delicious results!  We had so much fun coming up with all kinds of fun combinations; marshmallow/sprinkle, potato chip/pretzel, potato chip/Rice Krispies, pretzel/pistachio, chocolate chip/pretzel...........

Miss 4 had a blast and Miss 17 mo was licking her lips.  See below for a simple baby "trail mix" that we threw together as not to leave our littlest Valentine, who oddly enough does not like strawberries, out of all the fun.

We had so many toppings left over! We just couldn't bare to part with them, so we poured them all into a big 'ol mason jar.  Miss 4 thought this was super awesome and decided her new concoction would be great sprinkled over greek yogurt or ice cream!  I like the way this girl thinks!!

We've already started discussing, quite enthusiastically, our possible toppings for next year. What do you think?

*Poprocks
*Crushed Fruit Loops
*Pink Himalayan Sea Salt
*Chili Powder
*Fruity Pebbles
*Pecans

Baby "Trail Mix"

While assembling our initial toppings bar we created a fun baby trail mix for our little Valentine.  We omitted the nuts and the sprinkles and added a few more ingredients from the pantry.

Baby Trail Mix

*Cheerios
*Raisins
*Animal Crackers, broken into small bits
*Pepperidge Farm pretzel goldfish, broken into small bits
*Kellogg's Rice Krispies
*Mini chocolate chips
*Trader Joe's Roasted Coconut Chips
*Kraft jet-puffed mallow bits
